Cauliflower Broccoli Stir-Fry

This is a staple side-dish in our house that we make at least 1x per week. It is packed with plant-powered protein and has two of the good greens on Dr. Esselstyn’s list

  • Cook Time 10 Minutes
  • Total Time 20 Minutes
  • Serves 4 People

Ingredients

  • 1 tsp oil (olive or avocado)
  • 1/2 tsp cumin seeds
  • 1/4 to 1/2 tsp turmeric powder
  • caulflower florets (1/3 of a head of cauliflower), can also use stem of cauliflowers
  • broccoli florets (equal to amount of cauliflower) and broccoli stems cut long
  • salt to taste

Instructions

  1. Heat up oil in pan and add cumin seeds. Once they begin to open/release aroma (approx 2 min), add turmeric and stir
  2. Add cauliflower and stir for approximately 5 minutes (add water to prevent it from burning - 1 tbsp at a time)
  3. Add broccoli and salt and stir. Cook for approximately 2-3 more minutes
  4. Serve hot and fresh! Enjoy
