Mater Mushroom or Mater Tofu

This is a delicious vegan alternative to Mater Paneer (which has dairy).  Mushrooms are low in calories but are packed with micronutrients like B vitamins as well as fiber!

Delicious Alternatives:

Substitute tofu for mushrooms. Would cook tofu in oven or air-fryer for 10 minutes

  • Serves 6 People

Ingredients

  • 1 tbsp olive or avocado oil
  • 1 tsp of Panch Phoran (mix of spices)
  • 1 medium onion diced
  • 2 tbsp of ginger garlic paste
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 2 tomatoes (diced) or 3/4 of a can of diced tomatoes
  • 8-10 mushrooms (quartered)
  • 1.5 cups Frozen peas
  • Salt to taste

Instructions

  1. Add oil to pan and panch phoran and cook until it has cooked for 1-2 min
  2. Add onions and sauté for 5 minutes until translucent
  3. Add ginger garlic paste and cook for 30 seconds
  4. Add tumeric and garam masala and sauté for 30 seconds
  5. Add diced tomatoes and cook until incorporated into a paste
  6. Add mushrooms and peas and cook for 5 min, stirring frequently
  7. Add water and salt and cook on low heat for 5-10 minutes

Notes

Can serve with rice

Can make it creamy by substituting 1/2 cup or water with plant-based milk (like almond or soy milk)
