Mater Mushroom or Mater Tofu
This is a delicious vegan alternative to Mater Paneer (which has dairy). Mushrooms are low in calories but are packed with micronutrients like B vitamins as well as fiber!
Delicious Alternatives:
Substitute tofu for mushrooms. Would cook tofu in oven or air-fryer for 10 minutes

- Serves 6 People
Ingredients
- 1 tbsp olive or avocado oil
- 1 tsp of Panch Phoran (mix of spices)
- 1 medium onion diced
- 2 tbsp of ginger garlic paste
- 1 tsp turmeric
- 1 tsp garam masala
- 2 tomatoes (diced) or 3/4 of a can of diced tomatoes
- 8-10 mushrooms (quartered)
- 1.5 cups Frozen peas
- Salt to taste
Instructions
- Add oil to pan and panch phoran and cook until it has cooked for 1-2 min
- Add onions and sauté for 5 minutes until translucent
- Add ginger garlic paste and cook for 30 seconds
- Add tumeric and garam masala and sauté for 30 seconds
- Add diced tomatoes and cook until incorporated into a paste
- Add mushrooms and peas and cook for 5 min, stirring frequently
- Add water and salt and cook on low heat for 5-10 minutes
Notes
Can serve with rice
Can make it creamy by substituting 1/2 cup or water with plant-based milk (like almond or soy milk)
