Simple Beans and Greens Chili

I make this for snacks as well as for a side dish for dinner. Just a filling and hearty simple recipe that you can whip up in minutes

  • Cook Time 15 Minutes
  • Total Time 25 Minutes
  • Serves 4 People


  • 1 small to medium onion diced
  • 1-2 carrots diced (or 20 baby carrots)
  • 1-2 stalks of celery diced
  • 1 can of black beans (rinsed)
  • 1 can of diced tomatoes
  • 1 tsp garlic powder
  • Greens of choice (chopped) - kale as a favorite
  • salt to taste
  • Toppings of choice (pumpkin seeds, avocado)


  1. Add diced onions, carrots, celery and garlic powder to saute pan with 1/3 cup of water and cook for 5-10 minutes
  2. Add greens, black beans, diced tomatoes and salt to taste
  3. Cook on low to medium for 10 minutes
  4. Serve as a side dish or as a chili sprinkled with toppings of choice
  5. Enjoy! You just got your fiber, protein and phytonutrients!
