Sprouts Salad
A simple hearty protein filled salad which is perfect for a snack or a side salad.

Ingredients
- Lentil Sprouts
- 1 apple (diced)
- 1 red onion diced
- 4 tbsp lemon juice
- salt to taste
- optional: cilantro or green chilis diced
- optional: spanish peanuts
Instructions
- Lentils - 1 cup - soak for 6-8 hours in water
- Drain water and wrap soaked lentils in a wet cloth (cheese cloth or other thin cotton cloth)
- Rotate sprouts in cloth and keep lightly wet until lentils sprout - approximately another 12-16 hours
- Once sprouted, mix with diced apples, onions, and other ingredients
- Enjoy!
Notes
Keeps well in fridge for 1-3 days.
