Sprouted Lentils

Sprouts Salad

A simple hearty protein filled salad which is perfect for a snack or a side salad.

Ingredients

  • Lentil Sprouts
  • 1 apple (diced)
  • 1 red onion diced
  • 4 tbsp lemon juice
  • salt to taste
  • optional: cilantro or green chilis diced
  • optional: spanish peanuts

Instructions

  1. Lentils - 1 cup - soak for 6-8 hours in water
  2. Drain water and wrap soaked lentils in a wet cloth (cheese cloth or other thin cotton cloth)
  3. Rotate sprouts in cloth and keep lightly wet until lentils sprout - approximately another 12-16 hours
  4. Once sprouted, mix with diced apples, onions, and other ingredients
  5. Enjoy!

Notes

Keeps well in fridge for 1-3 days.
