Dr. Pradhan's Powerful Three Bean Salad

Protein Packed Three Bean Salad

Check out this fresh summer bean salad which also works all year long!

Ingredients

  • SALAD INGREDIENTS
  • 1 can of black beans (drained and rinsed well)
  • 1 can of kidney beans (drained and rinsed well)
  • 1 can of chickpeas beans (drained and rinsed well)
  • 1-1.5 cups of frozen corn (thawed to room temperature)
  • 1-1.5 cups of cherry tomatoes chopped up (ideally without seeds)
  • 1 apple chopped or jicama (peeled and chopped)
  • 2-5 spring onions chopped
  • DRESSING INGREDIENTS
  • 1/2 Cup red wine vinegar
  • 2 tbsp olive oil
  • 2-3 cloves of garlic (finely chopped)
  • 1/2 tsp cumin powder
  • 1/2 tsp chili powder (optional)
  • 1/2 tsp salt (optional)

Instructions

  1. Combine all salad ingredients together
  2. Combine all dressing ingredients together
  3. Combine salad and dressing together just prior to serving
  4. Serve approximately 1/2 to 1 cup of salad per person
  5. Enjoy!
