Dr. Pradhan's Powerful Three Bean Salad

Protein Packed Three Bean Salad
Check out this fresh summer bean salad which also works all year long!

Ingredients
- SALAD INGREDIENTS
- 1 can of black beans (drained and rinsed well)
- 1 can of kidney beans (drained and rinsed well)
- 1 can of chickpeas beans (drained and rinsed well)
- 1-1.5 cups of frozen corn (thawed to room temperature)
- 1-1.5 cups of cherry tomatoes chopped up (ideally without seeds)
- 1 apple chopped or jicama (peeled and chopped)
- 2-5 spring onions chopped
- DRESSING INGREDIENTS
- 1/2 Cup red wine vinegar
- 2 tbsp olive oil
- 2-3 cloves of garlic (finely chopped)
- 1/2 tsp cumin powder
- 1/2 tsp chili powder (optional)
- 1/2 tsp salt (optional)
Instructions
- Combine all salad ingredients together
- Combine all dressing ingredients together
- Combine salad and dressing together just prior to serving
- Serve approximately 1/2 to 1 cup of salad per person
- Enjoy!
